
Maggie Mae's Florida Hush Puppies
We have lots of fish in Florida. Nothing goes better with fresh fish than good old fashioned hush puppies. This is an easy recipe with extra flavor we use in Florida. Maggie Mae's offers southern recipes we use in our retaurants.

Ingredients
- 3 tbsp Minced Dried Onions regenerated in 1/3 cup of water
- 2 each Large Eggs
- 1/2 cup sugar
- 1 cup Self Rising Corn Meal
- 1 cup Self Rising Flour
- 1/2 cup milk
- 1/2 tsp salt
- 1/2 tsp garlic powder optional
- 1 pinch cayenne pepper optional
- Oil for frying
Instructions
- Beat Eggs with a whisk for 30 seconds
- In a separate bowl combine sugar, flour, seasonings and cornmeal
- Combine the eggs, milk and onions and mix into the sugar/flour mixture. Mix until the texture of very heavy batter.
- Heat oil to 350 degrees. Add large rounded tablespoons of mixture to oil. Fry turning occasionally for 4 minutes until golden brown. Makes about 24 Hush Puppies.
- Don't over crowd the hush puppies in the oil. You only need about two inched of oil in a pot of you choice. Keep temperature about 350 degrees.
Notes
Of course, you could use real onions, but the regenerated onions in the water add a unique flavor. These are easy to make on a stove top to go with any fresh fish. Great with shrimp and grits too! Maggie Mae's Florida Hush Puppies make a great side for any seafood dish. You can be creative - we have added corn, more cayenne, chopped green pepper and just about anything you choose. Even drizzled with some maple syrup will bring them back to the table!
