
Florida Tequila Shrimp Tacos
Slightly spicy tacos made with Florida shrimp and a touch of Florida orange juice.

Ingredients
- 1/4 cup lime juice
- 2 ounces blanco tequila
- 1 tbsp. olive oil (or canola)
- 1 ea. jalapeno minced, fine
- 1/2 tsp salt
- 1 pound Key West Pink Shrimp (or substitute) peeled, deveined
- 2 cups red cabbage shredded (cole slaw style)
- 2 ea. green onions chopped (with green stems)
- 1 ea. poblano pepper thinly sliced (or thinly julienned)
- 2 tbsp. Florida orange juice
- 1/4 cup cilantro chopped
- 1 tpsp. canola oil (or corn oil)
- 8 ea. tortillas (corn or flour)
- Optional Serve topped with a dollop of sour cream laced with your favorite taco seasoning.
Instructions
- Mix the lime juice, tequila, oil (1tbsp.), minced jalapeno, and salt together in medium bowl.
- Pour ONLY 2/3 of the mixture into a zip loc bag. Add the peeled and deveignedshrimp. Let marinate for 30-45 minutes.
- Make slaw for topping by mixing the shredded cabbage, chopped green onions, poblano pepper, chopped cilatro, oil (1 tpsp.) , salt and orange juice in a seoarate bowl.
- Drain shrimp (after marinading), discard marinade.
- Thread shrimp on skewers and grill over medium heat. Brush with the reserved marinade and again after turning just once. Total cooking time of no more than 5 minutes. (Alternative cooking method: in medium skillet, over medium high heat, place shrimp in pan. Brush with marinade and turn just once.)
- Serve shrimp in tortillas and top with slaw.
Notes
These Florida shrimp tacos are reasonably healthy with a touch of spice and authenticism. Florida's Key West pink shrimp add just enough sweetness to balance the dish.
