
Gorgonzola Bucatini with Tenderloin Tips from Maggie Mae's
This hearty dish is delicious. Serve for a special dinner or party. While Gorgonzola cheese is strong, the flavor is calmed in the sauce recipe.

Ingredients
- 1 lb. Tenderloin Tips or any steak tips cit in ¾ inch pieces
- 1 cup flour with salt & pepper
- 1 lb. bucatini pasta or fettucine, spaghetti, others?
- 4 cups heavy cream
- 4 oz Gorgonzola cheese crumbles blue cheese can work also
- 3 tbsp. grated Parmesan cheese
- ½ tsp. salt
- ½ tsp. black pepper
- 3 tbsp. chopped parsley
- optional; add or substitute mushrooms, top with parsley or more crumbled cheese, add roasted red peppers.
Instructions
- Bring 4 quarts of salted water to a boil.
- Add the pasta and cook according to instructions on package.
- While pasta is cooking, roll the steak tips in the cup of seasoned flour.
- Heat a medium fry pan to medium high heat with two table spoons of butter.
- Quickly brown steak tips and set aside. Browning should leave the tips medium.
- Drain cooked pasta and set aside.
- In a medium sauce pan, heat 4 cups of heavy cream to simmer. Do not boil.
- Add the Gorgonzola, Parmesan, salt, pepper. Stir until smooth and cheese melted. Add parsley and remove from heat.
- In a large pasta serving bowl, add the bucatini and top with the steak tips. Cover with the Gorgonzola sauce and serve. You could also serve in separate dishes and let guests make their plates.
Notes
This is a perfect dish for a special dinner. Unusual and delicious when served with crusty garlic bread. The sauce can be used on many dishes. This is another Maggie Mae's recipe.
