
Maggie Mae's Bourbon Sauce
This is a large recipe used in the restaurant. The good news is it can be used in a variety of ways and it keeps for several days.

Ingredients
- 1 pound butter
- 2 cups white sugar
- 2 cups light brown sugar
- 1 1/2 cups heavy cream
- 1/3 cup bourbon
- 1 teaspoon salt
Instructions
- Melt butter over medium heat.
- Whisk in remaining ingredients. Simmer until thickened, whisking often. About 3 minutes.
- Cool slightly.
Notes
This sauce has a high sugar content. It will burn easily, but it will also caramelize beautifully. Use on chicken, pork, or even roasted vegetables. Other ideas include using with rice. Sauce for bread pudding. Drizzle over slices of angel food cake. Use as a dip for chicken fingers. For a little kick to the sauce add a teaspoon of red pepper flakes.
