Maggie Mae's Cheesy Scalloped Potatoes

This casserole will be a hit for dinner or a party. Easy to do, but a delicious addition to any meal.

Ingredients
  

  • 3 1/2 lbs. Russet or potatoes of choice sliced thin
  • 1 med. onion sliced thin
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 6 tbsp.. butter
  • 2 cups grated cheddar cheese of your choice plus extra cheese for baking on top
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder (optional)
  • 2 pinches cayenne pepper (optional)
  • Salt & Pepper to Taste carefully

Instructions
 

  • Start oven at 375 degrees
  • Start boiling water for potatoes
  • Thinly slice the potatoes and onion
  • Place potatoes in the boiling water for 5 minutes
  • Add the sliced onion during the last minute of boiling the potatoes
  • In a separate medium pan add the cream of mushroom soup, milk,butter, sour cream and bring to medium heat without boiling.
  • Add the cheddar cheese to the soup mixture to melt slowly. Add the garlic powder and other spices of choice.
  • Once the potatoes and onions are done, drain and place in a 9 x 13 baking dish.
  • Pour the melted cheese mixture over the potatoes in the baking dish. Gently lift the potatoes up slightly to allow the cheese mixture to get into the dish.
  • Bake at 375 degrees for 25-30 minutes until browned and bubbly.
  • Let cool for 10 minutes before serving.

This is what the casserole will look like before baking.
Be careful adding salt to this dish. The cream of mushroom soup is generally salty enough. This is a flexible recipe where you can add ingredients or substitute cream of chicken soup for a different flavor. Bacon, smoked sausage and more mushrooms are good additions. We also use different cheeses for the body and top occasionally.
We use a hand mandolin like this to slice the potatoes and onions that makes it easy and we can control the thickness.
