Maggie Mae's Chicken Enchiladas

This recipe will be a hit at a party or the family will love you! Easy to maketoo.

Ingredients
  

  • 8 ea 6"-8" tortillas
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 2 tsp finely chopped jalapeno's
  • 1 cup queso blanco shredded
  • 1 cup sour cream
  • 5 cups cooked chicken shredded
  • TOPPING
  • 1 cup (heaping cup) Cheddar Cheese shredded
  • 1 cup enchilada sauce or thick salsa

Instructions
 

  • Heat over to 375 degrees.
  • Mix all ingredients together EXCEPT for the topping of cheddar cheese and enchilada sauce.
  • Fill each tortilla with about a cup of the chicken mixture.
  • In a 9 x 13 baking dish place each tortilla side by side.
  • Spread on top all the tortillas one cup of enchilada sauce.
  • Finish with the cheddar cheese spread on top.
  • Bake for 25 minutes in preheated oven.
  • Serve with sour cream.

Notes

This recipe is highly flexible. You can substitute the cheeses for other kinds, add or reduce the jalapenos, and you can use whole chicken or breast meat.
