Ingredients
- 2.5 lbs chicken breast cooked, 1/4" cubed
- 1 tbsp sweet pickle relish
- 1/2 tbsp fresh parsley
- 3/4 cup canned pineapple chopped
- 1/2 tbsp - 1/2 tablespoon lemon juice
- 1/4 cup onions chopped fine
- 1 tsp salt
- 3/4 cup mayonnaise
- 2 tbsp carrots shredded, chopped
Instructions
- Place all ingredients in medium mixing bowl. Gently mix.
- Chill and serve on bed of lettuce surrounded with sliced strawberries and grapes.
- Top with chopped walnuts (optional)
Notes
This is an excellent salad for sandwiches, topping a salad or just on a toasted English muffin. We recommend Maggie Mae's honey yogurt dressing for a salad. NOTE - do not use fresh pineapple. The acid breaks down the ingredients and it will become watery.
