Maggie's Coconut-Orange Chickpea Soup

Delighful taste os an easy to make soup to lighten up after the holidays.

  • 1 tbsp olive oil
  • 1 cup sweet or yellow onion, diced
  • 1 1/2 cups diced carrots
  • 1/2 cup roasted red peppers, diced (or red bell peppers)
  • 1 tsp minced garlic
  • 1 1/2 tsp salt
  • 1/2 tsp ground cardamom
  • 1/2 tsp black pepper or white pepper
  • 1 quart vegetable stock or broth
  • 1 can (14 ounces) Coconut milk
  • 1/2 cup Florida orange juice
  • 1 can (14 oz) chickpeas (garbanzo beans) drained
  • optional chopped cilantro or parsely


  • In a medium fry pan, add the tablespoon of olive oil and heat to sizzling.
  • Add the carrots, onions and salt (bell peppers also if you use instead of roasted red peppers)
  • After onions are translucent, add the garlic, cardamon and cook for just 90 seconds.
  • While vegetables are simmering, in a soup pot, add the vegetable broth, coconut milk and bring to simmer without boiling.
  • Add the vegetable mixture and stir until carrots are tender.
  • add the orange juice as the last step and remove from heat.
  • Taste for seasoning and garnish with cilantro or chopped parsley.


This a refreshing soup and you can make it even more flavorful by considering these additions -
  • 1/2 tsp cayenne pepper
  • if veggie's aren't your thing add a cup of chopped bacon and saute the veggies in the bacon grease instead of olive oil.
  • you can substitute ingredients like cauliflower, broccoli and even sweet potatoes.
