Sauces for Savvy Cooks – Must Have Easy Sauces

The recipes below should be part of every home cook’s bag of tricks. You can dress up the simplest recipe or the most elegant preparation.

Easy Buffalo Wing Sauce – Hooter’s Style

  • Equal Parts of Frank’s Hot Sauce and Melted Butter

Hot Wing Sauce – 2 parts Frank’s and one part melted butter


Sticky Teriyaki Style Wing Sauce

  • ½ cup Hoisin Sauce
  • ½ cup honey
  • ½ cup soy sauce

Lemon Dill Sauce – used for fish and vegetables

  • 2 tablespoons finely chopped dill
  • ¼ cup Greek yogurt
  • 6 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ⅛ teaspoon salt
  • 2 teaspoons water (for desired thickness)

Pesto Sauce – use a blender or food processor – mix together

  • ½ cup raw unsalted pine nuts, cashews, or walnuts*
  • ½ cup grated Parmesan cheese
  • 2 medium garlic cloves
  • 2 cups loosely packed fresh basil
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon salt
  • ½ cup olive oil, plus additional as needed

Garlic Cream Sauce (or Afredo) – make a roux with the butter and flour, then add balance

  • 1 tablespoon salted butter* (double all ingredients to serve with 1 pound pasta)
  • 1 garlic clove, grated
  • 1 tablespoon all-purpose flour
  • 1 cup 2% milk, whole milk or heavy cream – adjust for desired thickness
  • ¼ teaspoon salt
  • 2 tablespoons shredded Parmesan cheese

Tzatziki Sauce – make in blender or food processor (can be briskly whisked)

  • 1 cup finely grated cucumber (10 ounces or ¾ large cucumber, with skin removed)
  • 2 cups (18 ounces) full-fat Greek yogurt
  • 2 medium garlic cloves, minced
  • 1 tablespoon red wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon salt, divided
  • 1 tablespoon chopped fresh dill (optional)
  • Fresh ground black pepper

Honey Garlic Asian Style Sauce – prepare cornstarch and water in a separate bowl – Place the balance of ingredients in a small saucepan and heat – add cornstarch mixture which will thicken in a minute – remove and serve or refrigerate.sauces recipes

  • ¼ cup regular soy sauce
  • ¼ cup honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon olive oil
  • ¼ teaspoon garlic powder
  • 2 garlic cloves, grated
  • ½ teaspoon fresh grated ginger
  • 1 tablespoon cornstarch
  • 6 tablespoons water

Lemon Butter Sauce – saute butter and garlic until melted and bubbly – add lemon and finish with salt and parsley – great with fish.

  • 4 tablespoons salted butter
  • 1 garlic clove, minced
  • 2 tablespoons lemon juice, plus zest of ½ lemon
  • 1 tablespoon finely chopped parsley
  • 2 pinches salt

Creamy Horseradish Sauce – whisk together

  • 3 tablespoons prepared horseradish
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon chopped chives (optional)
  • ¼ teaspoon salt
  • Fresh ground pepper, to taste

Aioli – this is classic mayonnaise – whisk or use a blender. Pour oil into other ingredients slowly until mayo texture.

  • 1 small garlic clove (⅛ teaspoon finely minced)
  • ⅛ teaspoon salt
  • 1 egg yolk
  • 1 teaspoon white wine vinegar
  • ½ teaspoon Dijon mustard
  • ⅓ cup olive oil OR 3 tablespoons olive oil plus 2 tablespoons neutral oil

Yum Yum Sauce  – Made in Japanese Restaurants

  • 1 cup mayonnaise (vegan if desired)
  • 1 tablespoon melted butter (use coconut oil for vegan)
  • 1 tablespoon tomato paste
  • 1 teaspoon maple syrup
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 2 tablespoons water

 Note: we add a couple of pinches of cayenne pepper for a kick


Basic Tartar Sauce

  • 1 cup of Mayonnaise
  • 3 tablespoons sweet pickle relish
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon lemon juice (optional)

Sour Cream Sauce – for French fries, a dip, baked potatoes and more.

  • 1 cup sour cream
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • 2 to 3 tablespoons whole milk
  • 1 tablespoon dried or fresh chopped chives

Enchilada Sauce from Scratchsauces for savvy cooks

  • 3 tablespoons olive oil
  • 1 cup minced yellow onion (1/2 large)
  • 3 garlic cloves
  • 3 cups vegetable broth
  • 6 ounce can tomato paste (10 tablespoons)
  • 1 ½ tablespoons adobo sauce (from 1 can of chipotle peppers in adobo sauce)
  • 1 tablespoon cumin
  • ½ tablespoon oregano
  • ½ tablespoon garlic powder
  • ½ tablespoon chili powder
  • ½ teaspoon salt

Easy Teriyaki Sauce – heat in a saucepan – add cornstarch slurry with water last.

  • ¼ cup regular soy sauce 
  • ¼ cup maple syrup
  • 2 tablespoons rice vinegar
  • 1 ½ tablespoons cornstarch
  • ½ cup water
